Diet Quiche

Ingredients

Main ingredients

  • 1 large onion, diced

  • 1 (16-ounce) can mushrooms, drained

  • 2 tablespoons oil or more, if needed

  • 2 medium squash, diced

Directions

Make the Quiche

1.

Preheat oven to 350 degrees Fahrenheit.

2.

In a medium skillet, sauté onion in oil until soft and golden. Add mushrooms and continue to brown for two minutes more.

3.

In a four quart pot, steam squash until soft. Drain and mash. Add the sautéed vegetables, eggs, onion soup mix, and bread crumbs. Mix well. 

4.

Place mixture into nine-inch round pan and sprinkle extra bread crumbs on top. 

5.

Bake, uncovered, at 350 degrees Fahrenheit for 45 minutes.

Notes:

For a healthier quiche, use a low-fat, MSG-free soup mix.
