Traditional quiche is full of cheese, eggs, cream and made with a buttery pie crust, all of which are high-calorie and can be fatty. You can make a healthier quiche by using low-calorie, low-fat ingredients and adding vegetables. This dairy-free low-fat quiche recipe is perfect for pretty much any meal – the quiche can be made ahead and is just as flavorful served warm or at room temperature.This crustless quiche combines sautéed onions, mushrooms, and steamed zucchini but you can add in any vegetable you want.
1 large onion, diced
1 (16-ounce) can mushrooms, drained
2 tablespoons oil or more, if needed
2 medium squash, diced
2 eggs
1/2 tablespoon onion soup mix
5 tablespoons Gefen Bread Crumbs
Preheat oven to 350 degrees Fahrenheit.
In a medium skillet, sauté onion in oil until soft and golden. Add mushrooms and continue to brown for two minutes more.
In a four quart pot, steam squash until soft. Drain and mash. Add the sautéed vegetables, eggs, onion soup mix, and bread crumbs. Mix well.
Place mixture into nine-inch round pan and sprinkle extra bread crumbs on top.
Bake, uncovered, at 350 degrees Fahrenheit for 45 minutes.
