Delicious, easy recipe to use up leftover rice! Add leftover chicken or beef for a full meal. This recipe moves quick, so have all your ingredients chopped and ready before starting.
2 tablespoons neutral oil like canola or avocado
1 shallot or half an onion, diced
3 cloves garlic, minced or 3 frozen garlic cubes
3 eggs
3 cups cooked leftover rice, at least a day old
salt, to taste
pepper, to taste
pinch of msg (optional but recommended)
soy sauce, to taste
1 red chili, thinly sliced (optional)
2 scallions, thinly sliced diagonally
leftover chicken or beef (optional)
Heat oil in wok or deep frying pan. Add onion and garlic, mix so it doesn’t burn.
In a bowl, break eggs. Add a pinch of salt and whisk. Add to the wok and mix to avoid clumping.
Add leftover rice. Mix with large ladle to remove all clumps.
Season with salt and pepper and a pinch of msg if using.
Pour soy sauce around the wok, a tablespoon at a time until seasoned to taste.
Sprinkle chillis and scallions, toss to combine.
Add chicken or beef, if using.
Remove from heat and serve.
