“Eggplant Casserole” Dip

Ingredients

Eggplant Casserole

  • 2 tablespoons oil, fat or water

  • 1 eggplant, peeled and cubed

  • 1 onion, diced

  • 1/2 teaspoon salt

  • 1/8 teaspoon pepper

  • 2 to 3 hard boiled eggs, chopped

Directions

Prepare the Eggplant Casserole

1.

Place oil, eggplant, onion and spices in heavy pot. Cover.

2.

Simmer for 45 minutes. Mash with fork. Add chopped eggs.

3.

Serve warm or chilled.
