Everything Asparagus

  • 1/2 teaspoon black pepper

  • 2 tablespoons everything spice

Directions

Prepare the Asparagus

1.

Line a sheet pan with parchment. Preheat the oven to 400 degrees Fahrenheit.

2.

Hold the asparagus at each end and bend gently until the hard bottom part of the stalk snaps off. Do this for all of the asparagus stalks.

3.

Drizzle the oil over the asparagus. Sprinkle on the seasonings.

4.

Use your hands to toss the ingredients all together. Smooth the asparagus back into a single layer.

5.

Roast in the oven for 20–30 minutes until it’s tender-crisp. Then remove from heat and serve either hot or room temperature.

Notes:

This dish can be frozen, but I don’t love what happens to the texture. It becomes more flaccid on second heating, so ideally serve fresh and not made in advance.   To clean green asparagus from insects, the tips as well as the triangular side leaves should be cut off and discarded. Alternatively, use frozen asparagus with a reliable hechsher. Thaw and skip step 2.

This is a side that everybody has their own version. Now I’ll tell ya, THIS is the version that I like the most. I have gotten more compliments on this one here. I will say this, the secret to making this “pop” is using FRESH cracked pepper! BIG difference from the bargain pepper you get. I have a good friend that also says that using the 7-peppercorn mix in a mill also makes this fantastic, although I have not tasted this one, yet.
