Classic dairy cupcakes with a fun and colorful flair.

Ingredients

Cupcakes

  • 2 cups flour

  • 1/2 teaspoon salt

  • 2 teaspoons Haddar Baking Powder

  • 1/2 cup butter or margarine, softened

  • 1 cup sugar

Vanilla Frosting

  • gel food coloring (optional)

  • 5–6 cups confectioners’ sugar (depending on how sweet you like it )

Directions

For the Cupcakes

1.

Preheat oven to 375 degrees Fahrenheit. Line muffin cups with papers liners.

2.

In the bowl of an electric mixer, cream butter and sugar until fluffy. Add eggs, one at a time. Add flour mixture, alternating with the milk, and beat well. Add vanilla.

3.

Divide batter evenly among muffin cups and bake for 18 minutes. Let cool in pan completely before frosting.

4.

In a large bowl combine flour, baking powder, and salt.

For the Frosting

1.

In the bowl of an electric mixer, whip the butter and sugar together until fluffy. Add vanilla and milk and continue to beat until frosting is desired consistency.

Tips:

To make a colorful frosting, you don’t need to color your actual frosting. Simply paint stripes of food coloring on your piping bag fitted with a start tip. When you pipe, the color will emerge in a neat pattern. Choose a fun, coordinating paper liner and add the second liner to the cupcake after baking.
