2 quarts (about 6 pounds) crushed fresh peaches
1/2 cup water
2 teaspoons Gefen Vanilla Extract
6 cups sugar
Combine peaches and water in a six quart heavy pot. Bring to a boil and cook for 10 minutes.
Add sugar and cook over medium-low heat until thick, about 45 minutes, stirring frequently at the beginning of the cooking period and constantly towards the end. Stir in vanilla extract.
Ladle quickly into sterilized jars. Seal at once. Makes 4 pints.
