Diets Little bursts of summer on toasted bread — bright, colorful, and as beautiful as they are delicious. This classic appetizer not only delights the palate but also adds vibrancy to the decor.
Yield: approximately 25 toasts
2 pounds cherry tomatoes or any variety tomatoes, diced
1 small onion, finely chopped
1/2 ounce fresh basil, chopped
2 cloves garlic, minced or 2 cubes Gefen Frozen Garlic
3/4 teaspoon Haddar Kosher Salt
1 French bread
6 tablespoons Tuscanini Olive Oil
Preheat the oven to 450 degrees Fahrenheit. Line a baking sheet with Gefen Parchment Paper.
Slice the French bread on a diagonal into 1/4-inch-thick slices.
Place four tablespoons olive oil in a bowl, and brush both sides of each slice with the oil. Place on the prepared baking sheet, and bake for seven to eight minutes until golden. Set it aside.
Place tomatoes, onion, basil, garlic, and salt in a medium bowl, and stir to combine.
Pour off excess juice, and add remaining olive oil.
Top each piece of toast with the tomato mixture and serve.
