Diets One of my kid’s and (husband’s) favorite quick and easy dinners! Includes my trick for making the best fries and a shake recipe I made up one summer morning when I was frustrated at myself that the kids didn’t eat a lot of their veggies. They only like pink shakes! I also didn’t like it that they were eating so much sugar. Luckily, the strawberry-watermelon shake requires zero sugar and it is so sweet!
6 potatoes
salt
1/2 cup vegetable oil or till oil covers half the potatoes
16-ounce pack of strawberries
1/2 of a mini watermelon
2 cucumbers
4–5 leaves of spinach (sometimes I add celery, too!)
6 fresh pieces of salmon
pinch of salt
pinch of pepper
fresh parsley
On stovetop, place a pan with oil.
In the meantime, slice your potatoes. (If you want big fries, cut them the longer way.) Add all the potatoes to the pan and turn on the heat to medium-high (closer to high).
Sprinkle paprika and salt. The paprika gives it a nice color. Cook for 25–30 minutes, stirring once after about 10 minutes. Stir again at the end of the cook time to make sure it’s ready. Remove your fries to a bowl with a paper towel so the oil drains off.
Add all ingredients and blend.
Preheat oven to 400 degrees Fahrenheit. Spray a nine- by 13-inch pan with olive oil spray.
Place your fish and sprinkle salt, pepper, paprika and fresh parsley.
Bake on 400 degrees Fahrenheit for 25 minutes.
