I always enjoy a salad with fruit alongside a heavy meal. The bright colors of the fruit make it so appealing and such a pretty addition to the table.
1 cup quinoa
2 cups water
pinch salt
1 pomegranate, seeded
1 mango, diced
1 pint blueberries
juice of 1 large lime (about 2-3 tablespoons Heaven & Earth Lime Juice)
3 tablespoons Gefen Honey
1 tablespoon Bartenura Balsamic Vinegar
1 tablespoon Bartenura Olive Oil
dash pepper
Rinse quinoa well and place in a saucepan.
Add water and salt and bring to a boil. Boil for five minutes. Turn to low and let simmer for about 15 minutes, or until water is absorbed.
In a large bowl, combine quinoa and fruit. Mix all dressing ingredients and toss with quinoa.
