Diets There’s something about adding fruit to rice that elevates the whole dish up to a new level.
3 cups uncooked rice, such as Pereg Jasmine Rice
1 teaspoon salt
6 cups water
1 tablespoon oil
3 shallots, chopped
1/2 cup chopped dried apricots
1/2 cup Gefen Dried Cranberries
1 tablespoon Gefen Honey
salt, to taste
pepper, to taste
1/4 cup shredded coconut
In a medium-sized saucepan, bring six cups of water to a boil. Add the rice and salt. Cover and simmer until water evaporates.
Meanwhile, in a large frying pan, sauté shallots in oil until golden, about three to five minutes. Add the fruit, honey, salt, and pepper and sauté an additional two minutes.
Mix the fruit mixture with the cooked rice. Sprinkle with shredded coconut before serving.
