When I was growing up, fruits were eaten as a snack or maybe dessert, but never in salads. I’m glad that we’ve moved on from those limited options and that almost anything goes with everything now.
1 package fresh iceberg lettuce
2 oranges or mandarins, cut into segments
1 cup raisins
1/2 cup slivered almonds
1/2 cup sweetened pecans
1 small shallot, thinly sliced
1/4 cup raspberry jam, such as Tuscanini
3 tablespoons Tuscanini Red Wine Vinegar
2 tablespoons Tuscanini Olive Oil
salt, to taste
In a bowl, combine all salad ingredients.
In a jar, add all dressing ingredients and shake until combined.
Pour dressing over salad just before serving.
