A delicious quick nosh that will make you feel you’re snacking on an appetizer platter at a restaurant. As a benefit, the sweet carbs from the dates are balanced out by protein, making this snack super filling and balancing the sugar spike.
Beleaves Dates (as many as you want to make)
your favorite goat cheese
Gefen Hot Honey, for drizzling
Using a sharp knife, halve each of the dates. Remove the pits, if using whole dates, and hold the open date up to a strong light to check for signs of infestation. If clean, proceed. (Otherwise, discard the date and start over.)
Into the date, nestle about two teaspoons of your favorite goat cheese. Close up the date slightly over the cheese. Continue with the remaining dates until you have made as many servings as desired.
Drizzle dates with a little hot honey before serving.
