Ingredients

Grandma Esther's Tzimmes

  • 10 dried prunes, quartered

  • 2 tbsp honey

  • 1/2 cup orange juice

  • salt to taste

  • 2 tbsp oil

  • 1 medium onion, chopped

  • 4 large carrots, sliced into large coins

  • 1 large sweet potato, peeled and cut into cubes

Directions

Prepare Grandma Esther's Tzimmes

Heat oil in a medium saucepan. Gently fry chopped onion until beginning to brown.

Add carrots and sweet potato and saute 2 more minutes.

Add prunes, honey, orange juice, and salt to taste. Bring to a simmer, cover and simmer for 40-45 minutes, stirring occasionally, until vegetables are tender.
