10 dried prunes, quartered
2 tbsp honey
1/2 cup orange juice
salt to taste
2 tbsp oil
1 medium onion, chopped
4 large carrots, sliced into large coins
1 large sweet potato, peeled and cut into cubes
Heat oil in a medium saucepan. Gently fry chopped onion until beginning to brown.
Add carrots and sweet potato and saute 2 more minutes.
Add prunes, honey, orange juice, and salt to taste. Bring to a simmer, cover and simmer for 40-45 minutes, stirring occasionally, until vegetables are tender.
