1 pound carrots
2 pounds sweet potatoes
1 cup prunes
1 cup dried apricots
1/4 cup brown sugar
1/2 cup orange juice
1 teaspoon cinnamon
1 teaspoon salt
Heat oven to 350 degrees Fahrenheit.
Cut up carrots and sweet potatoes into one- to two-inch chunks. Low boil them for 20 minutes. Drain.
Put all ingredients into bowl and mix. Cover with foil and bake for a half an hour.
