Diets Simple, colorful, and made for outdoor cooking — these skewers bring together tender chicken and lightly charred vegetables with an easy, crowd-pleasing glaze.
1 and 1/2 to 2 pounds boneless chicken, cut into chunks
1 zucchini, cut into thick slices
1 cup mushrooms
1 cup pearl onions, peeled
1–2 peppers, cut into chunks
1 cup cherry tomatoes
wooden skewers, soaked
1/2 cup Gefen Duck Sauce
1/2 cup Gefen BBQ Sauce
1 small tomato
1 clove garlic or 1 cube Gefen Frozen Garlic
1–2 tablespoons oil, such as Gefen Canola Oil
salt, to taste
Preheat grill to medium heat.
Thread chicken and vegetables onto skewers, alternating ingredients and keeping pieces similar in size for even cooking.
Prepare the glaze: Combine all glaze ingredients and blend until smooth.
Brush skewers lightly with the glaze.
Grill, turning occasionally and brushing with additional glaze, until chicken is cooked through and vegetables are tender and lightly charred, about 12–15 minutes.
Serve warm.
