2 pounds chicken breast
1 can coconut milk
3/4 cup Gefen Natural Peanut Butter (smooth or chunky)
2 tablespoons soy sauce
1 tablespoon Gefen Honey
3 cubes Dorot Gardens Frozen Garlic
1 cube Dorot Gardens Frozen Ginger or 1/2 teaspoon dried ginger
1 teaspoon curry powder
2 tablespoons lime juice
wooden skewer sticks
8 small sweet potatoes, peeled and halved
oil spray, such as Glicks
1/4 teaspoon salt
Watch the episode for a tutorial on how to quickly prepare the skewers! Cut chicken into thick strips. Place four in a row and push a skewer through them all. Continue with three more skewers, then use a sharp knife to cut between the skewers. You should now have four skewers with chicken. Repeat with the remaining chicken.
Whisk together the sauce ingredients. Pour a little more than half the sauce over the chicken. Let marinate or grill right away.
Grill four to six minutes on each side.
Warm up remaining sauce in the microwave or on a low flame just until heated through. Whisk till smooth and serve with chicken skewers.
Preheat oven to 375 degrees Fahrenheit. Line a baking sheet with parchment paper and spray with oil. Place the sweet potatoes cut side down and spray again with oil. Shake salt over the top.
Bake 30 to 40 minutes or until the top has browned and soft when poked with a fork.
