While the grill is busy with the main course, let the pineapple caramelize until sweet, juicy, and smoky. Paired with creamy ice cream and a buttery sugar cone crunch, this effortless dessert is guaranteed to disappear fast!
1 whole pineapple, peeled
1 pint parve vanilla ice cream
4 Gefen sugar cones, crushed
Peel the pineapple and place it whole on the grill as soon as you start barbecuing.
Turn it every so often, allowing it to caramelize slowly while the rest of your meal cooks. It should be on the grill for at least 45 minutes. By the time dinner is over, the pineapple will be beautifully golden and tender.
Remove from the grill and cut into bite-sized cubes.
Scoop the ice cream into serving bowls.
Either gently fold the warm pineapple into the ice cream or spoon the pineapple over the top.
Finish with a generous sprinkle of crushed sugar cones for the perfect sweet crunch.
