Hasselback Butternut Squash

The orange color of this butternut squash is beautiful and vibrant. Prepared hasselback with a rub of olive oil and maple syrup, this dish is tender and sweet and makes a beautiful side dish or even a vegan entree. Catch all our Rosh Hashanah in 5 Instagram Takeovers HERE.

Ingredients

Hasselback Butternut Squash:

  • pepper, to taste

  • pinch of thyme

Optional Toppings

  • mint or parsley

Directions

Prepare the Hasselback Butternut Squash

1.

Preheat the oven to 400 degrees Fahrenheit. Line a metal baking sheet with Gefen Parchment Paper.

2.

“Hasselback” the squash by slicing most of the way through it down the whole length of the squash.

3.

Rub the olive oil, maple syrup, garlic salt, pepper, and thyme on top.

4.

Bake for around 45 minutes or until done. Top with the desired toppings.
