This fish is gourmet – fabulous!
4 salmon fillets
1 tablespoon Bartenura Olive Oil
3/4 to 1 teaspoon ground cumin
3/4 teaspoon salt
1/4 teaspoon ground Gefen Black Pepper, divided
4 tablespoons butter or margarine
1/4 cup hazelnuts, coarsely chopped
2 tablespoons lemon juice
2 scant tablespoons Bartenura Balsamic Vinegar
Brush fillets with olive oil. Then sprinkle fillets with cumin, salt, and 1/8 teaspoon of the black pepper.
Broil fish in broiler for 10-12 minutes or until fish flakes easily. Transfer fish to plate, cover, and keep warm.
In a skillet, heat butter and hazelnuts, stirring often, one and a half to two minutes, until butter and nuts begin to brown.
Stir in lemon juice and vinegar. Cook for 30 seconds longer until slightly thickened (aroma will be strong). Add remaining 1/8 teaspoon pepper.
Pour nut mixture over fish. Serve immediately.
