Mediterranean Hearts of Palm "Pasta" Salad with Avocado and Basil (Gluten Free)

Hearts of palm spaghetti is a fantastic low-carb substitute for regular wheat pasta. The hearts of palm "noodles" have a firm but tender texture and a mild flavor, and they will absorb plenty of the lemon vinaigrette in this salad.  

 

Don't skip the basil. It can be a pain to wash and check, but here, you only need a little bit and it adds a lot. 

 

This recipe is a salad or side dish that is suitable for Gluten Free, Paleo, Low Carb, and Keto diets.

  1. In a large bowl, combine Gefen Hearts of Palm Spaghetti, cucumber, tomatoes, avocado, and fresh basil.
