5 ounces spring mix, baby kale, or arugula
1 (14-ounce) can Gefen Hearts of Palm Spaghetti pasta
5 ounces spiralized or julienned beets
5 ounces spiralized carrots such as Heaven & Earth Carrot Spirals
sunflower seeds, for sprinkling
your favorite balsamic vinaigrette, or use the recipe that follows
2 tablespoons Tuscanini Balsamic Vinegar
2 tablespoons Gefen Lite Mayonnaise (sugar-free, if desired)
2 tablespoons water
1 tablespoon olive oil
1 teaspoon Dijon or yellow mustard
1 clove garlic, crushed
1 teaspoon salt
1/2 teaspoon Gefen Dried Basil
Whisk together all dressing ingredients.
In a trifle bowl, layer two thirds of the greens, hearts of palm, beets, carrots, and remaining greens. Top with sunflower seeds.
Drizzle with dressing and toss when ready to serve!
