Diets We love this for Seudah Shlishis, but it’s good anytime.
1 jar Gefen Hearts of Palm
1 avocado
1 box cherry tomatoes
1 purple onion
1/2 teaspoon salt
3 tablespoons Gefen Vinegar (use gluten-free if needed)
3 tablespoons Gefen Olive Oil
3 tablespoons sugar
2 teaspoons dried dill or 6 cubes Gefen Frozen Dill
Drain and cube hearts of palm. Peel avocado. Slice cherry tomatoes in half and dice purple onion. Combine all vegetables.
In a separate bowl, mix dressing ingredients and pour over salad. Toss gently to coat

Loved this! Very refreshing and healthy. I used fresh dill because I don’t have dried, and I used coconut sugar and apple cider vinegar to make it low-glycemic and compliant with my clean eating program. Looking forward to eating more as leftovers and would definitely make this again. Would probably be good with some toasted pine nuts/other seeds for crunch.
