So fresh and delicious!
5 peppers (use a mix of colors for brighter presentation)
1 can Palmini (hearts of palm “spaghetti” such as Gefen) or standard hearts of palm slices
4 tablespoons olive oil
1/2 teaspoon salt
1/4 cup cleaned and chopped parsley
3 tablespoons Heaven and Earth Lemon Juice
Broil peppers in the oven until the skin blackens, around 15 minutes.
As soon as you take them out of the oven, place them in a plastic bag until they cool completely. This method helps you pull the skin off the pepper very easily.
Skin the peppers. Then, slice the pepper into thin slivers, discarding all center seeds and stem.
Place in a bowl and mix with Palmini or regular sliced hearts of palm, olive oil , salt, chopped parsley, and lemon juice.
