Hearts of Palm Salad, Two Ways

Do you want to wow your guests (and of course, your family) with an exciting salad that is quick and easy to throw together? I serve this in my home every other Shabbos, and both variations are always a hit.

Ingredients

Salad

  • 1 small red onion, finely diced

Mediterranean Dressing

  • 2 limes, juiced

  • 2 tablespoons olive oil

  • 2 tablespoons light soy sauce

  • 2 tablespoons Gefen Honey or agave nectar

  • 1/2 teaspoon turmeric

  • 1/2 teaspoon cayenne pepper

  • 1/2 teaspoon salt

  • dash black pepper

Creamy Balsamic Variation

  • 2 cloves garlic, crushed

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

Directions

Prepare Salad and Dressing

1.

Combine hearts of palm, avocado, tomato and red onion.

For the Mediterranean hearts of palm salad, whisk together dressing ingredients. Toss with salad, and serve.

For the creamy balsamic hearts of palm salad, whisk together dressing ingredients until smooth. Toss with salad, and serve.
