Diets Even though I love fresh fruit, I also enjoy dried fruit as an occasional snack. This bar incorporates whole grain goodness with pecans and dried fruit chunks. It is absolutely decadent! Guests coming over? Whip these up! They present beautifully since they are full of color.
2 cups oats
1 cup shredded unsweetened coconut
1 cup pecans, chopped
1 cup raisins
1/2 cup dried apricots, chopped
3/4 teaspoon cinnamon
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 cup oil
3/4 cup brown sugar
1/4 cup Gefen Honey
1 large egg
1 teaspoon Gefen Vanilla Extract
Preheat oven to 350 degrees Fahrenheit. Spray a 9- x 13-inch baking pan with nonstick cooking spray.
In a large bowl, combine oats, coconut, pecans, raisins, and apricots.
In the bowl of an electric mixer, combine flour, cinnamon, baking powder, and salt. Add oil, brown sugar, honey, egg, and vanilla extract. Mix well. Then, add the oat/dried fruit mixture.
Press the mixture into the prepared baking pan. Bake for 25 minutes. Let cool completely and cut into bars.
Yield: 20 bars
