Kale, Broccoli, and Sweet Potato Salad

Ingredients

Salad

  • 4-6 cups kale

  • 1/2 teaspoon oil

  • 1/2 – 1 cup broccoli and cauliflower

  • 1 sweet potato

  • 5 radishes, cut into wedges

  • 1/2 cup whole almonds

  • 1 cup edamame (optional)

Optional Sweet Add-In (Choose One)

  • grilled peaches or pineapple

Dressing

  • 1 teaspoon salt

  • 1 tablespoon stevia

Directions

Prepare the Salad

1.

Preheat oven to 400 degrees Fahrenheit, or heat up the BBQ.

2.

Massage kale with oil until softened

3.

Bake or grill broccoli and cauliflower until slightly charred.

4.

Cut sweet potato into cubes or sticks and bake or grill, covered, until softened. Uncover at end for 10 minutes.

5.

If using edamame, roast until somewhat crunchy.

6.

Combine all componants in a bowl. Sprinkle over sweet add-in of your choice if desired.

Lemon Dijon:
2 T oil
Juice of 1 lemon
2 T orange juice
1 t dijon mustard
1 t salt
1 T stevia
