I made this when my son was refusing his chicken, and lima beans was a great way to add some protein to his diet!
2 large white onions, sliced
3 zucchinis, cubed
2 sweet potatoes, cubed
half a bag pinwheel pasta, raw
3 containers cooked and spiced lima beans
salt
garlic powder
onion powder
black pepper, to taste
cinnamon, to taste
Saute the onions in an eight-quart pot until translucent.
Add the squash and sweet potato and water to fill the pot.
Cook for 45 minutes or until the vegetables are pretty much soft.
Blend the soup with a hand blender until smooth. (At this point the soup will be pretty watery. but it will thicken soon).
Add the pasta and lima beans and cook for another 45 minutes.
Add spices to taste then cook for another 10-15 minutes so spices get absorbed.
