What do you do when your friend gives you a bag of beautiful limes from her tree? You make Lime Coconut Chicken. My friend Devorah gave me a bunch of limes and I wanted to use them for dinner. I love grilled chicken and wanted to change things up a bit from my usual. I used the lime zest and juice and then added coconut milk, jalapenos, cilantro, garlic, olive oil , black pepper and salt. This recipe has an incredible amount of flavor. You need to give yourself some time for the chicken to marinate, but otherwise it comes together pretty quickly. After you grill the chicken, you reduce the marinade and pour it over the chicken. I serve it with mashed cauliflower.
2 pounds chicken breast
13 and 1/2 ounces (about 1 and 2/3 cups) coconut milk
1/4 cup Gefen Olive Oil
zest and juice of 3 limes
1 teaspoon Gefen Salt
1/4 teaspoon black pepper
3 medium jalapenos, chopped
1 cup chopped cilantro
2 cloves of garlic, minced or 2 cubes Gefen Frozen Garlic
Slice chicken breast to desired thickness.
Add all the ingredients to a bowl and marinate covered in the refrigerator for six to eight hours.
Set grill to high heat and heat for 10 minutes.
Add chicken to grill and grill on both sides until cooked through.
Add marinade to a pan and cook until reduced to half the amount.
Spoon over the grilled chicken and serve.
