Lime Coconut Chicken

Ingredients

Main ingredients

  • 2 pounds chicken breast

  • 13 and 1/2 ounces (about 1 and 2/3 cups) coconut milk

  • 1/4 cup Gefen Olive Oil

  • zest and juice of 3 limes

  • 1 teaspoon Gefen Salt

  • 1/4 teaspoon black pepper

  • 3 medium jalapenos, chopped

  • 1 cup chopped cilantro

  • 2 cloves of garlic, minced or 2 cubes Gefen Frozen Garlic

Directions

Prepare the Chicken

1.

Slice chicken breast to desired thickness.

2.

Add all the ingredients to a bowl and marinate covered in the refrigerator for six to eight hours.

3.

Set grill to high heat and heat for 10 minutes.

4.

Add chicken to grill and grill on both sides until cooked through.

5.

Add marinade to a pan and cook until reduced to half the amount.

6.

Spoon over the grilled chicken and serve.
