Think loaded chili fries, but with a sweet potato waffle instead of fries!
2 medium sweet potatoes, peeled
1 medium russet potato, peeled
3 tablespoons margarine, melted
kosher salt, to taste
cooking oil spray
1 tablespoon Tuscanini Olive Oil
1 medium yellow onion, diced
1 pound ground beef
2 and 1/2 tablespoons chili powder
2 tablespoons ground cumin
2 tablespoons brown sugar
2 tablespoons Tuscanini Tomato Paste
1 tablespoon garlic powder
1 and 1/2 teaspoons salt
1/2 teaspoon ground black pepper
1 and 1/2 cups beef broth, such as Manischewitz
1 (16-ounce) can red kidney beans, drained and rinsed
1 (15-ounce) can petite diced tomatoes
8 ounces Tuscanini Tomato Sauce
1 plum tomato, diced
1 small red onion, diced
1 jalapeño pepper, diced
juice of 1 lime
salt, to taste
1 bunch cilantro, chopped (or 2 cubes Gefen Frozen Cilantro)
1 avocado, mashed
1 tablespoon mayonnaise
1/2 teaspoon garlic powder
salt, to taste
ground black pepper, to taste
Preheat the waffle iron while you make the waffles.
Grate the potatoes. Place them in a cheesecloth or mesh soup bag and squeeze out as much liquid as possible. Transfer to a bowl and mix in the margarine and salt.
Grease the waffle maker really well with oil spray. Add some potato mixture and cook until golden on both sides. Repeat until all potato mixture is used. Set waffles aside or keep warm in a 200-degree-Fahrenheit oven until ready to serve.
In a large pot, heat oil over medium-high heat for two minutes. Add onions and cook five minutes, stirring occasionally.
Add ground beef, breaking it apart with a wooden spoon. Cook six to seven minutes, until browned, stirring occasionally.
Add chili powder, cumin, sugar, tomato paste, garlic powder, salt, and pepper. Stir until well combined.
Add broth, beans, diced tomatoes (with their juice), and tomato sauce. Stir well.
Bring to a low boil, then reduce heat to low/medium-low and simmer gently, uncovered, for 20 to 25 minutes, stirring occasionally. Remove from the heat and let rest five to 10 minutes before serving.
Prepare pico de gallo: In a bowl, mix tomatoes, onions, jalapeño, lime juice, salt, and cilantro.
Prepare guacamole: In a bowl, mix avocado, mayonnaise, garlic powder, salt, and pepper.
Top latke waffles with chili, pico de gallo, and guacamole.
