Diets A sweet twist on the quintessential Passover breakfast, follow these simple recipes to get the perfect Matzo Brei every time! This matzo brei calls for some sweet ingredients and majorly enhances the flavors, leaving everyone begging for more! Serve as is or top with your favorite jam, berries, or cheese!
2 to 3 eggs
2 cups of water
1 cup of raisins
1/2 cup sugar
1/8 cup cinnamon
1/4 cup vanilla
Fill a large bowl with lukewarm water.
Break matzos into bite-sized pieces and place into the bowl. When the matzo becomes soft, drain the water.
In a separate bowl, beat the eggs. Add softened matzo and mix gently. Mix in raisins, sugar, cinnamon and vanilla.
Spray a frying pan or skillet with cooking spray. Pre-heat on low medium.
Pour matzo mixture into heated frying pan. Cook for five to seven minutes, then flip and cook other side for another five to seven minutes.
When lightly browned, remove from pan and serve.
