Diets A traditional Passover side dish. Matzo farfel is the alternative-of-choice to rice during the holiday.
4 cups crushed matzo
1 teaspoon salt
1/8 teaspoon pepper (optional)
4 eggs
1/3 cup oil or chicken fat
3–4 cups boiling water
Gefen Sweetened Dried Cranberries, for topping (optional)
pistachios, for topping (optional)
Crumble matzo to farfel-size pieces.
In large bowl, beat eggs, salt and pepper.
Add crumbled matzo and combine.
Heat oil in skillet and fry matzoh farfel for 10 minutes, stirring constantly.
Add water.
Cook, covered, for 25 minutes or until water is absorbed.
