Submitted by Gitty Rapaport When my children heard about the contest, they said “Mommy, you must submit your meatballs recipe. No one makes meatballs as good as you do!” I know this recipe is a hit because there isn’t a supper of meatballs and spaghetti when the children don’t ask for doubles! These meatballs are real comfort food, fluffy, saucy and so tasty!!! It’s sure to become your family favorite too!!
1.5 lb. combination ground chicken and beef
0.5 cup quick oats soaked in water (just covering the oats)
1 medium onion, grated
Generous squirt ketchup
2 eggs
0.5 tsp salt
0.5 tsp pepper
1-2 tbsp sugar (optional)
46 oz tomato juice
3rd of a can water
Large piece of a green pepper
1 small onion
Sugar, to taste
Salt and pepper to taste
Combine meatball ingredients.
Bring all sauce ingredients to a boil. Drop in balls of the mixture. Cook on a low flame. The longer it cooks, the better the taste and the thicker the sauce will get.
Serve with spaghetti. This meatball mixture can be used as hamburgers too.
