This dinner staple is so simple to make kosher for Passover. Passover noodles can be purchased in any kosher supermarket, and the meatballs can be made with or without matza meal, according to your family’s tradition.
2 pounds chopped meat
1 egg
1/2 onion, chopped
salt and pepper
1/2 cup Yehuda Matzo Meal or potato starch
1 tablespoon chopped parsley
1 clove garlic, minced
1/2 teaspoon oregano
16 ounces Gefen Tomato Sauce
1 package Gefen Gluten Free Thin Noodles
In large bowl, mix the first eight ingredients with half a cup tomato sauce. Form into small balls.
Put in greased baking pan and bake at 400 degrees Fahrenheit for 20 minutes.
Meanwhile, heat rest of sauce in large pot.
Put cooked meatballs in sauce and simmer for five minutes.
Cook noodles according to package directions. Drain well.
Serve meatballs and sauce over noodles.
