Mediterranean Baked Tilapia

  • 6 tilapia fillets

  • 2 tablespoons Tuscanini Olive Oil

  • 2 onions, diced

  • 5 cloves garlic, minced or 5 cubes Gefen Frozen Garlic

  • 1 ripe tomato, diced

  • 1 teaspoon white wine

  • 1 teaspoon mustard

  • 1 teaspoon ketchup

  • 1 teaspoon soy sauce

  • 1 teaspoon paprika, or to taste

  • 1 teaspoon salt, or to taste

  • 1/2 teaspoon fish spice

  • pepper, to taste

  • 1 cup water

  • 1 cup canned Glicks Chickpeas, drained and rinsed

Directions

1.

Preheat oven to 350 degrees Fahrenheit (180 degrees Celsius).

2.

Place fish fillets on a lined baking tray and set aside.

3.

Heat oil in a medium-sized skillet.

4.

Sauté onions and garlic until golden.

5.

Add all remaining ingredients except water and sauté lightly.

6.

Add water, bring to a boil, and simmer for two minutes while stirring.

7.

Pour sauce over prepared fish. Top with chickpeas.

8.

Bake uncovered for 30 minutes.

Tips:

Fish spice is made with paprika, turmeric, cumin, ground coriander, salt, and garlic powder. If you don’t have any, simply spice, to taste, with any or all of the aforementioned spices.
