A beautiful, colorful, easy-to-prepare white fish baked Mediterranean style and loaded with oregano, garlic, tomatoes, red onion, and olives.

Directions

Prepare the Mediterranean Baked White Fish

  1. Preheat oven to 425 degrees Fahrenheit.

  2. Brush a baking dish with olive oil. Sprinkle top and bottom of fish with 3/4 teaspoon salt and pepper. Be generous with the salt. Place fish in baking dish and squeeze lemon over.

  3. In a medium bowl, combine tomatoes, olives, red onion, garlic, thyme, and oregano. Add oil, remaining salt, and a pinch of pepper. Mix to combine.

  4. Pour mixture over fish.

  5. Bake for 15–20 minutes or until fish flakes easily.
