Diets This salad is so light and fresh, it’s going to be your new obsession. It goes with everything! Serve it as a side dish, or top it with feta cheese or salmon for a light meal. Inspired by @Chayaoflondon
romaine lettuce, such as Beleaves, chopped
cucumbers, chopped
shallot, finely diced
cherry tomatoes, halved
olives, roughly chopped
a generous amount of Tuscanini Capers, drained
2 to 3 tablespoons Gefen Olive Oil
juice of 1 lemon or 3 tablespoons Tuscanini Lemon Juice
2 to 3 tablespoons Tuscanini Red Wine Vinegar
about 1 tablespoon Dijon mustard
garlic powder
dried oregano
salt, to taste
black pepper, to taste
red pepper flakes, to taste
Place the romaine, cucumbers, shallot, cherry tomatoes, olives, and capers in a large salad bowl.
In a jar or small container, combine the olive oil, lemon juice, red wine vinegar, Dijon mustard, garlic powder, oregano, salt, black pepper, and red pepper flakes. Cover and shake until well combined.
Pour the dressing over the salad and toss to coat. Serve immediately.
For a more substantial salad, top with crumbled feta cheese or cooked salmon.
