This salad is refreshing, simple, and approachable — no ingredients too exotic for a younger crowd. Packed with fresh garden flavors but with a classic Italian twist, it’s an easy way to bring vibrant, wholesome flavor to your table.
8 ounces romaine lettuce
8 ounces purple cabbage
1 pint cherry tomatoes, halved
1 yellow pepper, diced
2 Persian cucumbers, diced
1 cup freshly grated Tuscanini Parmesan cheese
3/4 cup Tuscanini Kalamata Olives
1/2 cup pickled red onions
3/4 ounce fresh basil leaves, diced
4 ounces crumbled feta cheese
1/2 cup Tuscanini Light Olive Oil
1/4 cup Tuscanini Red Wine Vinegar
1 teaspoon mustard
1 clove garlic, minced or 1 cube Gefen Frozen Garlic
2 tablespoons fresh squeezed lemon or Tuscanini Lemon Juice
1/2 teaspoon dried oregano
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
Toss the salad components in a large salad bowl.
Place the dressing ingredients into a medium container, and mix to combine.
Drizzle the dressing over the salad before serving.
