1 pound (grass-fed) ground beef/turkey
1 onion
guacamole/1 mashed avocado
3-4 cups mixed greens/cabbage
1 large tomato, diced or salsa
taco seasoning: 1 teaspoon chili powder, oregano, cumin, 1/2 teaspoon salt, pepper, paprika, garlic powder, cayenne pepper
3 Ezekial tortillas
Saute the onion and seasoned ground meat.
Use a small circular tupperware as a mold to cut out a smaller tortilla. Heat it without oil for about a minute to crisp up. Set aside.
Place the ground meat on a large tortilla and top with salsa and greens.
Place the crunchy small tortilla and layer on avocado and greens. Be careful to not overstuff.
Fold in the large tortilla to form your crunchwrap. Add it folded side down to an oiled, hot pan. Cook for one to two minutes on each side. Then, flip to get crispy. Enjoy!
