Mexican Quinoa Salad

Ingredients

Main ingredients

  • 2 cups of cooked tricolor quinoa

  • 1 can of black beans

  • 1 can of corn

  • 1 cup of diced tomatoes

  • 1 big shallot diced

  • 1/2 cup of fresh chopped cilantro

  • 1 TBS of cumin

  • 1 lime (zest and juice)

  • salt

  • pepper

  • 1 avocado

Directions

Prepare the Quinoa Salad

1.

Empty out cans of beans and corn. Rinse and let it drain. Add to cooled cooked quinoa. 

2.

Cut up avocado in 1-inch cubes and add the rest of the ingredients together. Mix and enjoy.
