2 cups cooked quinoa
1 small tomato, seeded and finely diced
1/4 cup finely diced white onion
2 cubes Dorot Gardens Frozen Cilantro
1 cube Dorot Gardens Frozen Parsley
1 teaspoon fresh lime juice
1 teaspoon Bartenura Extra-Virgin Olive Oil
salt, to taste
pepper, to taste
Combine all the ingredients in a medium bowl. Stir until ingredients are evenly distributed.
Allow the salad to rest for 5-10 minutes to allow the flavors to meld. Serve cold or at room temperature.
