Prepare the Muffins
Preheat oven to 350 degrees Fahrenheit. Grease a muffin pan with nonstick cooking spray.
Combine flour, oats, cinnamon, baking powder, baking soda, and salt. Add applesauce, honey, egg, oil, and vanilla. Mix well. Stir in chocolate chips.
Pour batter into muffin pan. Bake for 20 minutes.

I have been making these for years and we love them. I do add sugar in place of half of the honey to make them a little sweeter.
These are delicious.I wanted to make them again,but by mistake made the other elky friedman oatmeal muffins,which have apple juice and a few other small differences.please note-these are much better,don't make my mistake!
