1 pint grape tomatoes, halved
1 large cucumber, diced
1 small red onion, very thinly sliced
1 small green or yellow bell pepper, thinly sliced
3 ounces pitted Tuscanini Kalamata Olives, halved or sliced
8 ounces Ta’amti Feta Cheese, crumbled or diced very small
1/3 cup Bartenura Olive Oil
zest of 1 lemon plus 4 tablespoons fresh lemon juice
1 teaspoon dried oregano
2 teaspoons Dorot Gardens Frozen Parsley, minced
Haddar Kosher Salt, as needed
In a small jar, combine the olive oil, lemon juice, lemon zest, and seasoning.
Mix well.
In a large salad bowl, combine the tomatoes, cucumber, onion, pepper, olives, and cheese.
Toss the salad with the dressing; serve.
