Diets 3 pounds boneless, skinless chicken thighs , cut in halves
1 red Honeycrisp apple, cored and quartered

1 pack whole mini carrots – preferably multicolored – or sub regular carrots peeled and halved lengthwise
2 shallots, peeled and quartered
3 sprigs thyme, pulled apart
generous glug of Gefen Extra-Virgin Olive Oil
2 teaspoons chili powder
1/2 teaspoon Gefen Cinnamon
2 teaspoons Gefen Paprika
salt
pepper
3 tablespoons Heaven & Earth Pure Date Syrup
2 pounds mini fingerling potatoes
4 yellow zucchini, cut into thick fries or rounds

Toss all ingredients well and arrange on a lined cookie sheet.
Roast for an hour on 400 degrees Fahrenheit, uncovered, or until chicken is cooked through and vegetables are caramelized, 45 minutes.
Remove cooked thyme. Drizzle with silan and garnish with fresh thyme.
Separately, toss together the potatoes with oil and seasonings on one sheet pan, and the zucchini with oil and seasonings on a second sheet pan. Roast.
