Once Upon an Apple-Carrot-Thyme Baby Chicken with Roasted Zucchini and Potatoes

Ingredients

Chicken

  • 3 pounds boneless, skinless chicken thighs , cut in halves

  • 1 red Honeycrisp apple, cored and quartered

  • 1 Granny Smith apple, cored and quartered

  • 8 mini apples – because they are adorable

  • 1 pack whole mini carrots – preferably multicolored – or sub regular carrots peeled and halved lengthwise

  • 2 shallots, peeled and quartered

  • 3 sprigs thyme, pulled apart

  • generous glug of Gefen Extra-Virgin Olive Oil

Roasted Zucchini and Potatoes

  • salt

  • pepper

Directions

For the Chicken

1.

Toss all ingredients well and arrange on a lined cookie sheet.

2.

Roast for an hour on 400 degrees Fahrenheit, uncovered, or until chicken is cooked through and vegetables are caramelized, 45 minutes.

3.

Remove cooked thyme. Drizzle with silan and garnish with fresh thyme.

For the Zucchini and Potatoes

1.

Separately, toss together the potatoes with oil and seasonings on one sheet pan, and the zucchini with oil and seasonings on a second sheet pan. Roast.

2.

Separately, toss together the potatoes with oil and seasonings on one sheet pan, and the zucchini with oil and seasonings on a second sheet pan. Roast potatoes for 30 minutes and zucchini for 20 minutes.
