One Bowl Chocolate Chip Oatmeal Cookies

Directions

  1. Heat oven to 375 degrees Fahrenheit.

  2. In a mixing bowl , combine oil, eggs, brown sugar, and vanilla until emulsified. Add flour, baking soda, salt, and cinnamon and mix until just combined. It’s ok if some streaks of flour remain. Fold in oats and chocolate chips and mix well.

  3. Scoop onto a parchment paper lined baking sheet, making sure to leave two inches between the cookies. About 12 cookies fit on a standard baking sheet.

  4. Bake on the middle rack for 10 to 12 minutes. Cool slightly on a rack and enjoy!

Notes:
These cookies can be frozen for two to three months. Thaw at room temperature.
