This easy dinner is loaded with veggies. The best part—if your kids love hot dogs as much as mine—is that they’ll request this meal over and over again!
3 tablespoons oil
24 ounces kielbasa, knockwurst sausages, or hot dogs, sliced into 1/2-inch pieces
1 onion, chopped
3 cloves garlic, crushed, or 3 cubes Gefen Frozen Garlic
1 red bell pepper, diced
1 orange bell pepper, diced
1 yellow bell pepper, diced
1 (8-ounce) container mushrooms, diced
2 tablespoons Tuscanini Tomato Paste
1 and 1/2 cups Gefen Orzo
1 tablespoon onion soup mix
1/4 teaspoon turmeric
1/4 teaspoon allspice
1/4 teaspoon cumin
1/8 teaspoon coriander
pinch of chili powder
1 teaspoon sea salt
1/8 teaspoon black pepper
2 cups water
1/2 cup fresh parsley, chopped
In a large pot, heat the oil over medium-high heat. Add kielbasa and cook five minutes, stirring every so often. Transfer the kielbasa to a pan and set aside.
Reduce heat to low, add onions and garlic, and sauté for three minutes, or until onions are translucent and garlic is fragrant.
Raise heat to medium, add peppers and mushrooms, and sauté for three minutes.
Add tomato paste and orzo and stir to combine. Add onion soup mix, turmeric, allspice, cumin, coriander, chili powder, salt, and pepper. Mix well.
Add water and stir again. Bring to a simmer, then reduce heat to low, return the kielbasa to the pot, cover, and cook for 30 minutes.
Sprinkle with parsley and serve.
