4 onions, chopped
1/4 cup Tonnelli Avocado Oil
2 tablespoons Gefen Honey
2 tablespoons Haddar Brown Sugar
2 tablespoons white sugar
1/2 teaspoon salt (or to taste)
mayonnaise, to taste (for binding)
Heat the avocado oil in a pan over medium heat.
Add the chopped onions and sauté, stirring occasionally, until they’re soft and beautifully golden brown. Take your time here — this is where all the flavor happens.
Add the honey, brown sugar, and white sugar. Mix well.
Let the onions continue to cook down, stirring occasionally so nothing burns. The mixture should become sticky, jammy, and deeply caramelized.
Season with salt, adjusting to your taste.
Remove from heat and let the onions cool completely.
Once cooled, add mayonnaise a little at a time — just enough to bind everything together (a little goes a long way).
