Diets This is a great salad if you’re looking for something differently delicious. Perfect for Rosh Hashanah!
2 beets, cooked and peeled, such as Gefen Organic Beets
3 shallots, quartered
1 tablespoon Gefen Olive Oil
2 cups Gefen Israeli Couscous or other pearl couscous, cooked
1 cup romaine lettuce
1 orange, sliced into 1/4 rings
2 tablespoons sunflower seeds
2 tablespoons orange juice
1 tablespoon Tuscanini Lemon Juice
1 tablespoon brown sugar
1/2 tablespoon Gefen Olive Oil
Preheat oven to 375 degrees Fahrenheit.
Slice beets into thin rings and place in a 9×13-inch pan together with shallots. Toss with oil and bake covered for 20 minutes. Uncover and roast for 10 minutes.
In a small bowl, whisk together dressing ingredients.
Place couscous, lettuce, orange, beets, shallots, and sunflower seeds in a bowl. Toss with dressing and serve.
