Another excuse for an especially tasty Mediterranean family meal.
1 package good-quality spaghetti/linguini, such as Tuscanini Spaghetti
2 large onions, peeled
4 cloves garlic, peeled and thinly sliced
7 and 1/2 ounces (215 grams) mixed olives, pitted and coarsely chopped
salt
black pepper
2 tablespoons grated Parmesan cheese
4 tablespoons Zeta Olive Oil, divided
1 red chili pepper, sliced into thin rings (optional)
1 sprig fresh thyme
chopped parsley
Cut each onion into six wedges.
Place in a bowl and sprinkle with coarse salt, thyme leaves, and two tablespoons olive oil.
Mix well and roast in oven at 400°F (200°C) until onions become soft and caramelized. Remove from oven and set aside.
In a large pot, cook pasta according to package directions.
Reserve 1/2 cup of cooking water from pasta.
Pour two tablespoons olive oil into a large frying pan. Lightly fry garlic slices and chili pepper rings over a medium flame.
When garlic and pepper are soft, add caramelized onions, chopped olives, and cooked pasta. Add the 1/2 cup of cooking water. Season with salt and pepper.
Raise flame and mix well. Remove from flame and add Parmesan and chopped parsley.
