Diets Calling all chocolate and peanut butter loves- this cookie is for you! Bring your classic chocolate chip cookies up a notch by adding delicious creamy peanut butter for something a little different.
8 tablespoons margarine, softened (use soy-free if needed)
1 and 1/2 cups dark brown sugar (packed)
1/2 cup granulated sugar
1/2 teaspoon salt
2/3 cup smooth Gefen Peanut Butter
2 large eggs
1 and 1/2 teaspoons Gefen Vanilla Extract
2 and 1/2 cups flour
2 teaspoons baking soda
2 cups chopped honey-roasted peanuts
sugar, for sprinkling
Preheat oven to 350 degrees Fahrenheit. Line three cookie sheets with Gefen Parchment Paper.
In the bowl of electric mixer, beat margarine, sugars, salt and peanut butter just until smooth. Beat in the eggs, one at a time. Beat only until smooth after each addition. Beat in the vanilla.
Separately, in a small bowl, mix the flour with the baking soda, then beat into the peanut butter mixture, scraping the bowl and beaters. Stir in the chocolate chips and peanuts.
Scoop or spoon two-tablespoon-sized mounds of the dough onto the prepared pans. Dip a glass into sugar and flatten the cookies with it.
Bake for 10 minutes.
