Refreshing summer fruit with a delicious golden crust.
5 pears
5 yellow clingstone peaches
5 yellow peaches
3 and 1/2 tbsp sugar
2 tbsp lemon juice
1 cup sugar
1/2 cup oil
1 cup all purpose flour
1 tsp baking powder
pinch of salt
1 large egg
1 teaspoon vanilla extract
Preheat oven to 350 degrees F and grease ramekins.
Dice pears and peaches into small pieces and mix in a bowl. Add 3 and 1/2 tbsp sugar and 2 tbsp lemon juice and mix well. Fill greased ramekins almost to the top with the peach mixture and set aside.
In a medium bowl whisk 1 cup sugar and oil together until combined. Add flour, baking powder, salt and then mix. Add in egg and vanilla. Continue to whisk or mix together until just combined. (Batter will be the consistency of cookie dough.)
Take pieces of the dough and spread on top of each ramekin evenly.
Bake in preheated oven for 20 minutes or until crust is golden brown.
Remove from oven and let stand for 5-10 minutes before serving.
Enjoy with vanilla ice cream, whipped cream or on its own!
